Green Curry Chicken Salad

As the weather gets warmer I want foods that are light, refreshing, and healthy. Something that I can take on a picnic in the park or to the beach. A classic chicken is great, but can sometimes feel heavy with all that mayo. So I replaced it with a mix of greek yogurt and avocado to make it lighter and healthier. The green curry and lime give it a summery, refreshing vibe that makes it perfect for a picnic or as a post workout snack.
Ingredients
- 1 medium avocado 
- ½ cup greek yogurt (plain, nonfat) 
- 1 tbsp green curry paste 
- Zest and juice of 1 lime 
- ¼ cup chopped cilantro 
- 12 oz pulled chicken breast (~2 cups) 
- ½ cup shredded carrot 
- Salt and pepper to taste 
Directions
- Peel and deseed an avocado. In a large mixing bowl mash the avocado. 
- Add greek yogurt, curry paste, lime zest and juice, and cilantro. Mix well until it forms a consistent texture. 
- Mix in chicken breast and shredded carrot. Add salt and pepper to taste. 
- Refrigerate until ready to eat. It will last about 5 days in the fridge. 
- Serve in a lettuce wrap, on rice cakes, as a sandwich, or just by itself!
