Directions

1. In a small sauce pan mix apples, water, and 1 tbsp coconut sugar.
   

2. Bring up to medium heat and simmer for 10 minutes, until sugar dissolves and caramelizes the apples, stirring occasionally.
   

3. In a large mixing bowl whisk together dry ingredients. (oat flour, protein powder, baking soda, cinnamon, and remaining coconut sugar)
   

4. In a separate bowl mix together yogurt, egg whites, and vanilla.
   

5. Add the wet ingredients into the dry mix and whisk together until a consistent batter forms.
   

6. Preheat the oven to 350F.
   

7. Spray a muffin pan and fill with batter. Fill each slot about ⅔ full to give it room to rise.
   

8. Spoon caramelized apples on top of batter.
   

9. Bake for 15-20 minutes, until risen and golden brown.
   

10. Let them cool and then enjoy!
