2 cups mixed nuts (here’s the combo I used, but feel free to use whatever you like)
¾ cup almonds
¾ cup cashews
½ cup pecans
2 egg whites
½ cup coconut sugar
1 tsp vanilla extract
1 tbsp cinnamon
1 tsp allspice
1 tsp nutmeg
In a large mixing bowl whisk egg whites until frothy, about 2-3 minutes.
Whisk in sugar, vanilla extract, cinnamon, allspice, and nutmeg. Mix until well combined.
Stir in mixed nuts until they’re evenly coated with the egg and spice mixture.
Spread out on a baking sheet lined with parchment paper.
Bake until the sugar caramelizes, about 10-15 minutes.
Remove from the oven and let cool for at least 20 minutes. The nuts will still be a little soft when removed from the oven, but as they cool the coating will harden into a caramelized shell.
