Protein Snickerdoodle Cookies


¾ cup (90g) all purpose flour

1 scoop (34g) BPN Cinnamon Roll whey protein powder (or vanilla)

½ cup (64g) peanut flour (PB Fit or PB2)

2-3 tbsp. Stevia / natural sweetener (more or less to taste)

½ tsp. Baking powder

¼ tsp. Salt

½ tsp. cinnamon

1 whole egg

½ cup (120g) unsweetened applesauce

3 tbsp. (42g) light butter

1 tsp. Vanilla extract

Cinnamon Sugar Coating

½ tbsp. Ground cinnamon

3 tbsp. Granulated sugar (or sugar substitute) 


  1. Preheat the oven to 350F. In a large bowl, mix together: flour, protein powder, peanut flour, sweetener, baking powder, salt and cinnamon. Add egg, applesauce, light butter and vanilla extract. Mix until a thick dough forms. 
  2. Add ground cinnamon and granulated sugar (or sugar substitute) to a bowl. Scoop dough into 8 balls. Roll in the cinnamon sugar mixture. 
  3. Place on a cookie sheet. Press each cookie dough ball down slightly with your fingers or a fork to flatten. Bake at 350F for 8-10 minutes. They cook quickly so don’t forget about them. Enjoy!
