Apple Cinnamon Protein Waffles

Waffles
1 scoop (34g) BPN cinnamon roll whey protein powder
¼ cup (30g) all purpose flour
Pinch salt
¾ tsp baking powder
¼ tsp apple pie spice
¼ tsp. cinnamon
½ cup (120g) unsweetened applesauce
1 whole egg
½ tsp. Vanilla extract
Apple Topping
½ large granny smith apple
1 tbsp. Light butter*
¼ cup sugar free maple syrup*
Cinnamon to taste
Notes
*Can also use regular pure maple syrup and regular butter for the apple topping depending on calorie needs.
Instructions
- Preheat waffle iron to medium heat. Add all ingredients for the waffles to a bowl. Gently stir together until a smooth batter forms.
- Spray waffle iron with nonstick cooking spray. Divide the batter between 3-4 spots in the waffle iron (or 1 large waffle with a Belgian waffle iron). Cook for 5-7 minutes or until the waffles are golden brown.
- For the apple topping, heat butter on medium/high heat in a pan. Chop apple into small cubes, and add apple and maple syrup to the pan. Cook apples in butter / maple syrup for about 6-8 minutes. They should be tender, but not mushy. Add cinnamon to taste.
- Top waffles with cooked cinnamon apples and enjoy!
