Eggnog Protein Donuts
½ cup (60g) all-purpose flour
3 tbsp (46g) liquid egg whites (or 1 whole egg)
¼ cup (56g) plain, nonfat greek yogurt
⅓ cup (80g) eggnog
½ tsp vanilla extract
½ tsp cinnamon
¾ tsp baking powder
⅓ cup (80g) eggnog*
Sprinkle of cinnamon for topping (optional)
*I used an almond milk eggnog for this recipe because it is lower in sugar and calories. Feel free to use any eggnog of choice.
- Preheat the oven to 350F. Add all donut ingredients to a bowl. Gently stir together until a smooth batter forms. Pour batter into a plastic/piping bag.
- Spray a donut pan with nonstick spray. Cut the tip off the bag and pipe the batter into 6 spots in the donut pan. Bake at 350F for 8-10 minutes. Check at 8 minutes and be careful not to over-bake, or they will dry out.
- Once donuts are baked, let completely cool before adding glaze (can put in fridge/freezer to speed this up). Mix all glaze ingredients until smooth. Dip each donut in glaze and sprinkle with cinnamon. Enjoy!
